Mediterranean Coast (Tel Aviv, Haifa, Acre)

Late spring in May brings settled, warm weather with long sunny days and humidity still moderate along the shoreline; temperatures typically reach the low to mid-20s°C. The Mediterranean begins to feel inviting for swimming by the month’s end, and outdoor festivals in Tel Aviv ramp up; beach clubs start to fill at weekends. Lightweight clothing, sunscreen, and a hat are sensible; be prepared for the occasional hot, dusty hamsin spell that raises temperatures suddenly.

Northern Galilee & Golan Heights (Safed, Tiberias, Mount Hermon)

May brings warm, dry days and the Galilee blooms with wildflowers; Tel Sheva and the Golan’s wineries start outdoor tastings. Daytime temperatures can reach the low to mid-20s°C while nights remain comfortable; mosquitoes begin to appear near standing water, so insect repellent is handy. Trails are excellent for hiking and cycling, but watch for brief dusty hamsin gusts that occasionally push up temperatures.

Jerusalem & Central Highlands (Judean Hills, Bethlehem)

May sees warm, dry days that are excellent for hiking the Sataf trails and visiting the Mount of Olives; temperatures mostly reach the high teens to low 20s°C. Gardens and parks smell fragrant with late-spring blooms, and outdoor cafes fill with locals and visitors. Carry sunscreen and a hat for daytime, and expect larger crowds during holiday periods; evenings remain cool enough for a light sweater.

Jordan Rift & Dead Sea (Jericho, Masada, Dead Sea shoreline)

May brings noticeably hotter days with early summer heat; highs commonly reach the high 20s to low 30s°C in the Jordan Valley, and the Dead Sea is intensely saline and warm. Tourist activity increases as the weather is perfect for spa-style stays; however, exposed archaeological sites can be exhausting in midday heat. Plan morning excursions, carry hydration, and book shaded accommodations if staying poolside or at the shore.

Negev Desert & Eilat (Beersheba, Ramon Crater, Eilat, Mitzpe Ramon)

May becomes hot in exposed desert areas with daytime highs often in the high 20s to low 30s°C, though Eilat stays pleasantly hot rather than humid. The clear nights remain comfortable for stargazing in places like Mitzpe Ramon, and summer tourist season begins to ramp up in Eilat for diving and Red Sea activities. Pack breathable clothing, sun protection and plan strenuous activities for early morning hours.
